Tasty Tuesday Blog Hop!


Hello everyone from FTLOB, I am so happy to be hosting this weeks Tasty Tuesday blog hop!!! I thought I would share a fun new recipe I whipped up recently for a friend who can't eat gluten. The poor girl, can you imagine Christmas without COOKIES?!?! So I baked these tasty treats for her and they were a huge hit:

Gluten Free Boozy Breakfast Cookies
It is the holiday's after all!



6 tablespoons of margarine
1/4 cup firmly packed brown sugar
1/4 granulated sugar
1 egg
2 tablespoons grand marnier
1 tablespoon water
2 teaspoons vanilla extract
1 1/2 cups gluten free flour *
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
pinch of salt
2/3 cup semisweet chocolate chips
1/4 cup raisins
1 cup mixed nuts *


Preheat your oven to 375F/190C

Line a baking sheet with a piece of parchment paper

Soak your raisins in the 2 tablespoons of Grand Marnier for aprox 20 minutes

Blend your sugars and margarine in a separate bowl until light and fluffy

Add the vanilla, water, raisins, and grand marnier liquid to the sugar mix and stir in

In a separate bowl blend together the gluten free flour, baking soda, salt, cinnamon, nutmeg, chocolate chips, and nuts.

*(The flour I used was a multi-purpose gluten free flour made from brown rice, potato flour, and tapioca flour. There are many options on the market such as this one I also know people who have used 3/4 cups brown rice flour to 3/4 cups corn flour)

** I just used a trail mix for my mixed nuts, but you could use whatever you want. A full cup isn't necessary but I did want my cookies to be fairly filling and chunky

Slowly blend your dry mixture into your wet, a little bit at a time until thoroughly mixed.

Drop spoonfuls of your dough onto the parchment paper lined baking pan, leaving a bit of space between each cookie (they rise more then spread)

Bake for 8-10 minutes or until golden brown on top. Remove them from your baking sheet immediately and place on cooling racks...

And while they are cooling brew yourself a cup of tea/coffee to dip your boozy gluten free breakfast cookies into!
